I created this keto chocolate chip peanut butter cookie recipe on a rainy Monday night - these low carb cookies are the food equivalent of a warm hug on a cold and gloomy day. I whipped up this keto / paleo scone recipe earlier today for a Mother's day brunch and they were an absolute hit (my gluten-loving cousins even gobbled them up). I love a bowl of creamy soup on a cold winter day but I often have a hard time finding recipes that don't include heavy cream or milk (I stay away from dairy for the sake of my skin). After many lacklustre attempts I finally nailed this recipe for potato leek soup using coconut milk instead of cream.
